Doris Orine Greer (1922–2005) fed a generation of Eagles as St. Thomas’s cafeteria dietician for roughly two decades — a tenure so prolific that the 1973 Aquin yearbook officially and affectionately dubbed her lunchroom “Greer’s Grease-ateria.” Wife of Leon “Jack” Greer of River Oaks Automotive Service and proud mother of four Houston boys, she ran the line with the no-nonsense efficiency of a short-order admiral and the quiet warmth of a mom who knows you skipped breakfast. She is remembered here with full honors, a clean linen napkin she would have rolled her eyes at, and a nod to every square pizza slice she ever served.
