Houston’s beloved Cajun institution, co-founded in 1974 by STHS alum Frankie B. Mandola ’65 with his brother Luke B. Mandola Sr. and friend Ray Hay. Originally opened at 4302 Richmond Ave. as Ray Hay’s Cajun Po-Boys — in a building that had been a U-Tot-Em convenience store next to the Mandola family’s liquor store. Two years in, they started crawfish boils in the parking lot during the season; the response was so overwhelming they became the first restaurant in Houston to put fresh Louisiana crawfish on the menu. Renamed Ragin’ Cajun in 1981 after Luke’s alma mater, the University of Louisiana at Lafayette. Fifty years later, still at the original address, still family-run, still serving the gumbo, po’boys, and crawfish that helped make Houston a Cajun food city.
